Why We Chose Cold-Pressed Over Concentrate:

When we started formulating our shot, one of the first decisions we made was about process and not just ingredients. Traditionally, juice can be made two very different ways: cold-pressed from whole fruit and root, or reconstituted from concentrate. We chose cold-pressed. Here's why that matters.

Cold-pressing uses hydraulic pressure to extract juice from produce without heat or oxidation-heavy processing. In contrast, concentrate involves heating juice to evaporate most of its water content for shipping and storage, then adding water back later at the bottling stage. That heating step is efficient and cost-effective at scale, but heat and prolonged processing are known to degrade certain heat-sensitive nutrients. Vitamin C being a classic example, since it breaks down when exposed to high temperatures and oxygen.

Why this matters for our formulation specifically? Our shot is primarily built around fresh produce: 67% apple, 21% ginger, and 10% lemon, all cold-pressed rather than reconstituted. We layer in 1% acerola cherry extract and 0.25% ascorbic acid, both of which are meaningful vitamin C sources and that's exactly the kind of nutrient that's vulnerable to heat degradation during concentrate processing. Using a cold-pressed base helps us preserve more of what's naturally present in the apple, ginger, and lemon themselves, rather than relying entirely on added vitamin C to make up for what processing might otherwise strip away. We also include curcumin extract, which pairs with the same gentle-processing philosophy. Curcumin is a compound that's sensitive to its environment, and we wanted an extraction and blending process that treats it with care.

The honest caveat: Cold-pressing isn't magic, and no processing method eliminates *all* nutrient variability. Factors like fruit freshness, storage time, and packaging matter too, of course. What cold-pressing gives us is a shorter, gentler path from produce to bottle, with fewer opportunities for heat-sensitive nutrients to break down along the way. For a shot built around fresh, minimally processed ingredients, that felt like the right foundation to start from.
